Aging: Starch is stabilized, thus the rice grain will release less starch during cooking and will increase liquid absorption. Germ is the vital part of a rice grain. I am of North Italian heritage where risotto is prepared in a variety of marvellous ways. This is an excellent risotto. It is vacuum sealed in the can and ages one year. I think that any risotto that is vacuum sealed, even in vacuum sealed plastic bags will be the best. Rice that is only in cardboard boxes will not respond well to the long, reducing cooking process of traditional risotto. All vacuum sealed Arborio is more expensive. Bottom line: try it and evaluate the results! I bought it again and I buy vacuum sealed risotto rices wherever I can find them.
