**Q: How are these dried?**
A: No idea about the process but they are DELICIOUS!!! As another reviewer suggested I purchase both the powder & flakes- really wakes up the food with WONDERFUL FLAVOR!

**Q: Are these Hatch dried green chiles?**
A: Hello, Thank you for your question. While our Green Chile Powder is from the Hatch Valley, our Green Chile Flakes are sourced from farms in different parts of New Mexico. These are the same strains of chile that are grown in the Hatch Valley (the New Mexican Chile) and the quality and taste are the same. Hatch is the most famous chile town in New Mexico but there are many areas in New Mexico that grow excellent chile. Dixon, Lemitar and Chimayo being a few examples. Many people use the term "Hatch Chile" to describe all New Mexican chiles but here in New Mexico we are only allowed to use the word "Hatch" if the chiles have been grown in the Hatch Valley. **Q: Have the chiles been roasted & peeled before being turned into a powder?**
A: doesn't say if its roasted before grounding but it's NOT peeled.  Looks like its just dyed  and crushed.

**Q: Whats the heat value?**
A: If you are not use to heat it can be spicy, but it is hot. Definitely lets you know it is there!
