This cheese is perfect for eating along with a nice glass of red wine, or for melting on a tortilla with avocado and salsa, or anything you might crave or imagine. It has a full mellow sharpness , and is hard , but not crumbly. The last time we ordered they were out of the 1 year old cheddar, so we tried the 5 year old. It is delicious as well, and a little bit sharper; but a quite a bit more salty. Our favorite is the 1 year old; though I trust any cheese from these folks is beautifully made. The ice pack and cheese were both hot. BUT it’s been a week and it still tastes fantastic. I’ll be ordering other stuff to try. It’s expensive but worth it.
