Truffle 100% do not keep when brined or pickled, they don't even taste remotely the same as fresh truffles. The chemical that makes truffles taste the way they do fresh which gives them their fragrance literally completely disappears after two weeks. Almost as good as fresh, but with out the hundreds of dollars in cost... Plus the juice is amazing too add to recipes as well. I personally just like to use about half of a truffle, and a little juice mixed with a stick of butter and spread on baguettes before rising them.
