## Description

The cheese in question is Bergenost, described as an artisan cheese made in Corfu, New York by Yanceys Fancy Cheese. The cheese is a buttery triple cream Norwegian style cheese, made with imported cultures, and won the 1999 Gold Medal in the New York State Fair Cheese Competition. It is a cream-colored, soft cheese encased in a dark green wax shell and tastes mild and very rich.  Perfect paired with some crackers, green grapes and a hearty red New York wine.

I LOVE YANCEY'S FANCY BERGENOST CHEESE AND CAN'T FIND IT IN MY NEIGHBORHOOD. FINGER LAKES OFFERED THE BEST ONLINE SHIPPING RATE, BUT I WORRIED THAT CHEESE MIGHT BE DAMAGED QUALITY-WISE AND TASTE-WISE UPON ARRIVAL. NOT SO, DESPITE THE RECORD HEAT ACROSS THE COUNTRY DURING SHIPMENT, MY TASTE BUDS WERE AMPLY REWARDED UPON ARRIVAL OF THIS TREASURED CHEESE! YUM! I'LL GLADLY HAVE IT SHIPPED AGAIN.

While I have not purchased this through Amazon, I have bought it several times from my local Costco.  This is one of my all-time favorite snacking cheeses.  It pairs beautifully with wine, meats or jams, but it is equally enjoyable just plain.  It is a very creamy distinctive flavored cheese, without being overly sticky or heavy.  For anyone that likes a good white cheddar, this is a must-try.
