First, I trimmed the fat off of boneless chicken thighs and marinaded them in the sauce marinade about 3 hours with salt and pepper on the chicken as well. Next, I placed about 4 tablespoons of olive oil in a skillet and let heat as I cut up the marinaded pieces into small chunks. I then cooked the chicken in the oil for about 15 minutes until cooked throughout. I removed the chicken and placed it on some paper towels. Pat dry and completely drain and wipe the skillet and re-add chicken chunks back in with no more oil added, just chicken. Sear the chicken about 3-5 min on high (or less time depending on the amount of chicken used) then turn to medium and add your bourbon dipping sauce. Finally, turn back to high to cook off some liquid in the sauce for about 1-2 min then remove from heat and let sauce thicken. Personally, mall bourbon chicken would be my last meal I ever ate if on death row or placed in a last meal situation.
