It's got that old-timey texture that reminds me of my childhood days growing up in the southern desert. It's the kind of jerky that will take you time to finish one slab, it's very chewy, tough, flavorful, and dry in a good way. What the other reviewers say is true, when it's good it is the best jerky every, but when you get a bad batch it feels like a waste. However, it is so good that I keep buying them anyway because no one makes jerky this good and no one does the western cut like this, in tasty long-lasting sheets outside of small dusty southern states.Now my question... every single Western Cut is sold out without a restock in sight. Is this the end of this line of jerky? I sure as hell hope not, but if not... when is it coming back? My package contained Jerky that was full of fat and grizzle. Ended up throwing away a substantial amount of the product. However when there is large portions of fat in the jerky it tends to turn rancid and ruins the Jerky product. I definitely will not be purchasing this product again! It is salty but not too salty, in which allows us to enjoy piece after piece without wanting to drink gallons of water after consumption. My husband and I are now very addicted to Buffalo Bills Cajun Western Cut Big Slab Beef, and we have to order it once a month. One thing I have to mention is that I wish the company can make a re-sealable packaging because the beef jerkies tend to dry out once the bag is cut open and cannot be closed.
