And higher heat than normal applied right from the start of the mixing/knead cycle. The manual does caution you that the rise won't be as high and the finished texture will be coarser using ExpressBake. Can't speak for the 58 minute cycle as I've only used the 80 minute cycle and that produces a consistently good basic white bread. It's my go to cycle and recipe when I need something fast.
